SUMMARY:Salt of the Earth
DESCRIPTION:Salt Of The Earth is a talk by the Italian Academy of Cuisine\, Hong Kong Delegation in collaboration with Dante Alighieri Society\, within the 4th annual Week of Italian Cuisine in the World. \nItaly is rich in salt and places that have shaped their identity around this precious element. The Salt Road going from Piedmont to France\, the salt warehouses in Cervia and the Saline (Saltworks) in Sicily and Apulia are all landmarks of the economic importance of this ingredient. \nDuring the Roman Empire\, salt was used as a medium to pay the legionaries’ salaries (the word originates from here); the white gold played a central role in the Empire’s society and politics by literally fueling its military conquests. Moreover\, salt is at the very core of many Italian delicacies such as prosciutto\, culatello\, salame\, lardo\, Parmigiano Reggiano\, capers\, anchovies\, olives and others. \nThis evening talk\, hosted by the Italian Academy of Cuisine in collaboration with the Dante Alighieri Society\, will guide you through these legendary places\, history fragments\, ancient stories and foods. \nSpecial Canapes\, related to the use of Salt and delicius Italian wines will be offered during the event. \n\nSpeakers: \nDr. Filippo Scevola \nBorn in Turin\, Italy\, Dr Filippo Scevola graduated in Medicine and further specialized in Oncology and Gastroenterology and Gastrointestinal Endoscopy. He later earned a PhD in RIGS (Radio Immune-Guided Surgery) at University of Turin and Harvard Medical School\, Dana Farber Cancer Institute. He has been a professor of Gastrointestinal Endoscopy at the University of Turin since 1993. Dr Scevola has a strong interest in the arts\, particularly Art Deco. He is a member of Business Club Italia (BCI)\, a think-tank based in London; as well as Imprenditori e Dirigenti Europei (IDE) and consultore of the Italian Academy of the Cuisine Turin Lingotto Delegation. \nSavio Pesavento \nFounder and Director of Essess Ltd\, over twenty years ago Savio brought to Hong Kong the taste of Italian contemporary furniture design. A professional of communication and creativity who has lived across the globe\, Savio’s expertise encompasses all things Italian – food\, well-being\, art\, life style. In 2013 he opened the Hong Kong Delegation of the Italian Academy of Cuisine\, a prestigious association born in Milan (like Savio) in 1953. \nCristian Giancaterino \nBorn in Abruzzo\, Italy\, Cristian Giancaterino started his gastronomic career as an apprentice chef in Italy and then worked his way up the culinary career ladder working and living around the globe\, from London to Zhongshan\, from New York to Hong Kong. \nIn his time in Hong Kong\, Cristian has been Executive Chef of Cova Milan for seven years. Since 2010 he is Owner and Executive Director of The House of Fine Foods\, one of the most exclusive distribution companies in town\, importing high-end food items such as caviar\, smoked salmon\, high quality meats and seafood.
